We had a half-naked lemon, left over from the bread-making frenzy on Friday night. She’s hiding her zesty side.
We had some aging beets from the Farmers’ Market. Upon peeling, some of them turned out to have a little surprise of their own.
What’s a girl to do? Roast those babies to make a sweet treat for my vegetarian lunch.
I used my trusty electric roaster again and this recipe was perfect. As Rachael Ray says, YUMMO!

Roasted beets? I never have heard of that, but I guess it makes sense with them being a root vegetable and all. I applaud you for eating vegetarian for any meal. I aspire to that, but never quite make the cut! (I say this as I’m sitting here eating a slice of leftover pizza for breakfast! Healthy, huh?)
I’m a breakfast girl, and I use up a lot of calories in my breakfast scrambles. I usually try to have a vegetarian lunch to save some calories, unless I’m feeling peckish after all my water aerobics. And I have been known to eat pizza for breakfast. It’s the breakfast of champions as far as I’m concerned.
