Are you a Facebook recipe collector? I feel sometimes that all those recipes are like shiny bits of glitter and of course, the gorgeous photos are designed to attract my attention. This one for Fresh Corn Soup really caught my eye!
One of my favorite online cooks is David Lebovitz but I don’t usually try his recipes because they are often pastries, which I rarely eat. I could not resist this recipe for Fresh Corn Soup as I already had all the ingredients in my fridge.
It was a really easy recipe and can be prepped ahead of time. I added some green beans that needed to be eaten and substituted sweet red peppers for the hot peppers. All you would need to do at the last minute is to add the cream and heat the soup up.
Grab some of the wonderful fresh corn from the market and make this soup. You won’t be disappointed.

Can’t wait to try this for a summer lunch while everything is fresh! Hub is no real fan of meatless soup, but he looked at it and seemed to think it would be great to add some leftover portions of this soup to his chili.
